Southwest Turkey Chili

Recipe:
1lb lean ground turkey
1 can fire roasted diced tomatoes
1 can kidney beans
1 can black beans
1 can corn
1 pkg of your preferred chili seasoning mix
1 can tomato sauce
1 pkg sliced mushrooms (optional)
Add additional seasonings to taste. salt/ pepper/ red pepper.
1/3 can of Coors original beer
Optional Toppings:
Shredded cheese/ dairy free cheese
Cilantro
Avocado
Sour cream
Chives
Frito's
Directions:
1. In large pot, cook ground turkey on med/high heat until no longer pink.
2. Add chili seasoning pkg, add tomatoes, add tomato sauce, stir.
3. Add beans & corn, and mushrooms stir. Add additional seasonings if desired. Bring to a boil.
4. Turn heat down to low , cover, and stir occasionally for minimum of 30 minutes.
5. Add 1/3 can of Coors original and stir. Let alcohol cook out for a few minutes.
6. Drink the remaining beer.
7. Turn off heat. Once cooled, refrigerate and enjoy the next day. This allows all flavors to absorb, chili is always better the next day!
